Grill at 240°C for 15 minutes

1. Cut eggplant, capsicum, zucchini and onion into bite sized pieces. Toss with olive oil in a bowl
2. In a separate bowl, combine all the ingredients listed under A
3. Sprinkle the pork with salt and lightly dust with flour
4. Place veggies in a deep grill pan, top with pork, then pour the tomato sauce over everything
5. Cover with the shallow grill pan and cook in a toaster oven at 240°C for 15 min
6. Stir gently until thickened.
Serve with dried basil and black pepper if you like!
